What is the ICS chili?
The International Chili Society (ICS) is the largest sanctioning body of chili cook-offs in the country. Every year hundreds of chili cooks compete nationwide to qualify for ICS’s season finale – the World Championship Chili Cook-off (WCCC)!
What is competition style chili?
Competition chili will be made from chuck tender, sirloin or top round. The eatin’ chili meat will either be in chunks or ground with the course blade of the meat grinder. It may contain some fat and connective tissue. Competition chili will be precisely diced into cubes of about three-eighths of an inch in size.
How do I host a chili fundraiser?
Rules of the Cook-Off
- Keep the cook of each chili secret—as to not throw the vote!
- Invite your guests to taste a spoonful of each chili and fill out a ballot for their favorite before eating it as a meal.
- Have guests rate each chili on the ballot.
- Announce the maker of each chili and then announce the winner.

What are rules for a chili cookoff?
There are a few basic rules that a cook must remember: You must prepare your chili from scratch, in the open and on site at the cookoff. No marinating and no complete commercial chili mixes allowed. Do not use fillers in your chili; such as beans, macaroni, rice, hominy, or other similar ingredients.
