Can you use Shimano rotors with Avid brakes?
They work perfectly. As a precaution I’d suggest you make sure that the pads are fully on the disc and not extending beyond the discs edge. If you’d prefer to use Avid discs the Shimano adapters work very well too.

The BB7 mated to the speed dial levers is a winning combo. There are surely hydro brakes that have the adjustable features of the BB7, but you are going to pay a lot more money. In other words, the cheaper top of the line mechanical brake is going to perform better than the more expensive middle tier hydro brakes.
